Three breakfasts to start the day off on the right foot!

Cacio e pepe scrambled eggs

A quick recipe to prepare, which tastes like a good pasta dish. Care should be taken to keep the eggs slightly runny.

For 3 or 4 people. Preparation: 10 minutes. Cooking: 5 minutes.

Ingredients :

  • 8 organic eggs
  • ½ teaspoon of salt
  • 100 g grated parmesan
  • 2 tablespoons of olive oil
  • flower of salt
  • Freshly ground black pepper

Beat the eggs with a whisk, add the salt and half the parmesan. Heat the olive oil in a nonstick skillet. Place your hand over the pan to check the temperature. Once the oil is moderately hot but not smoking, test the heat of the pan: pour in a spoonful of beaten eggs. Ideally, the egg should sizzle gently and can be easily swirled around with a spatula. If it doesn’t sizzle, let the pan heat up for another 1 or 2 minutes. If the egg cooks too quickly, remove the pan from the heat and, if it does not stick, add the remaining eggs to the pan.

Swirl the eggs in a constant motion with a spatula in the same direction so they don’t stick together. The eggs will cook fairly quickly, make sure the plates are nearby. Take the eggs out of the pan before they are completely set, because once removed, they will continue to cook.

Divide the eggs among the plates. Sprinkle with the remaining Parmesan, add fleur de sel and freshly ground pepper.

Fruit Granola

A light and protein recipe, to which you can add a drizzle of honey or maple syrup.

For 750 g of granola. Preparation 10 minutes. Cooking: 20 to 22 minutes.

Ingredients :

  • 150g of honey
  • 5 cl of olive oil
  • 200g hazelnuts
  • 200g pecan nuts
  • 150g rolled oats
  • 100g slivered almonds
  • 50g sunflower seeds or pumpkin seeds
  • 25g black or white sesame seeds
  • 1 teaspoon of cinnamon
  • 50g dried apricots
  • 1 teaspoon wheat flour or rice flour
  • 50g raisins
