Both cozy and trendy, this haunt of good food has settled within the walls of the former Bel Ordinaire, in the heart of the gourmet district of the 10th arrondissement. The young chef (30 years old) and his brigade send out plates full of pep and above all originality. On the menu, the dishes that say the least are the ones that surprise the most.

Rascal by Pauline Séné
His dishes have the charm of the first openings. Until then Pauline Séné’s dishes were only à la carte (lunch formula at noon). But now that the kitchen is well-honed and hailed, the 30-something feels ready for a 5-step tasting menu (€75). A good way to discover the extent of Fripon’s cuisine.

Substance by Matthias Marc
His restaurant was already full before his participation in Top Chef, so since… Matthias Marc’s cuisine is not lacking in emotion. The young chef has put his guts as a child of the Jura and an explorer into it. He proposes to discover it through menus in several services (no à la carte dishes).

Located in the Les Halles district, Liquide presents itself as a “modern tavern”, with accessible prices and a relaxed atmosphere. The plates are designed to be shared. They highlight the Jura roots of chef Matthias Marc (made by Jarvis Scott) with a few curiosities such as the “Mont d’or fucker” or the tandoori frogs.

The chef who boasts a funky and sexy cuisine is currently at the head of the kitchens of Datsha in Paris after passing through Mordu at the Saint-Germain market. We find its usual audacity and pepper: artichoke mimolette, beef tripe and mussels. A dessert even enjoys a spritz emulsion.
