Monday, May 25: Hummus and simmered veal with spices
THE RECIPE OF HUMUS
The ingredients for 4 people :
- 200g cooked chickpeas
- 2 garlic cloves, peeled and chopped, mashed
- 1 small green seedless pepper, chopped into a puree
- 8cl tahini sauce
- 1 lemon juice
- 1 tsp. chopped flat parsley
- some pine nuts
- 2 tsp. olive oil
- fine salt

THE RECIPE FOR VEAL SAUCE WITH SPICES
The ingredients for 4 people :
- 700g minced veal
- 1 peeled and chopped onion
- 3 garlic cloves, peeled and chopped
- 1 eggplant, washed and cut into 0.5 cm cubes
- 100g mixture of crushed pistachios and toasted pine nuts
- 1 tsp. 1 tsp cumin seeds or powder
- 1 tsp. 1 tsp paprika
- 1 tsp. 1 tsp ground turmeric
- 1 tsp. harissa coffee
- 200g reduced tomato sauce
- 150g tahine paste
- 50g lemon juice
- 100g of water

Tuesday, May 26: Lamb chop chichurri, peas and vanilla cake
THE RECIPE OF CHIMICHURRI LAMB CHOPS, PEAS AND VANILLA CAKE
The ingredients for 4 people :
- 12 lamb chops
- Mix of washed, stripped, chopped herbs: ½ bunch of flat parsley /
- ¼ bunch of coriander / ¼ bunch of mint
- 6 garlic cloves, peeled and degermed
- 2 pinches of cumin powder
- 1 lemon
- 1 orange
- 20cl olive oil + 1 dash for cooking
- Green tabasco
- 200g peas cooked in water
- some toasted and crushed almonds
- 20g butter
- Fine salt
Utensils :
- 1 pan + 1 tong
- 1 small blender + 1 maryse + 1 container for the sauce
- 1 frying pan + 1 spatula
THE VANILLA CAKE RECIPE
The ingredients for 4 people :
- 3cl milk + the pulp of 2 vanilla pods
- 150g flour
- 200g of fine ointment butter
- 100g + 50g sugar
- 60g almond powder
- 4 eggs
- 8g baking powder
- 1 pinch of fine salt
- syrup: 9cl of water + 30g of sugar + 3cl of rum + 1 vanilla pod
- 1 ramekin: 90g icing sugar + 15g strawberry puree + 1 vanilla pod

Wednesday, May 27: chicken and vegetable spring rolls, tangy sauce and cherry clafoutis
THE RECIPE OF CHICKEN NEMS AND VEGETABLES, ACIBULATED SAUCE
The ingredients for 4 people :
- 250g chicken breasts, cut / chopped
- 1 carrot, peeled and cut into a chopper
- 1 onion, peeled and chopped
- 50g washed button mushrooms, diced
- 125g bean sprouts
- 50g mango bean noodles soaked in water
- 3 tsp. soy sauce
- 1 egg
- 16 rice cakes
- 1 tsp. 1 teaspoon corn flour
- 1 beer
- a few salad leaves and mint to serve with spring rolls
- sauce: 1 lime juice / 1 tablespoon. teaspoon nuoc mam sauce + sugar
- sunflower oil
Utensils :
- 1 salad bowl + 1 tablespoon
- 1 tea towel + 1 salad bowl + 1 ramekin + 1 teaspoon
- 1 wok-type saucepan + 1 tong or 1 skimmer + 1 plate with absorbent paper
THE RECIPE FOR CLAFOUTIS WITH CHERRIES
The ingredients for 4 people :
- 400g of washed and dried and hulled cherries
- 200g flour
- 4 eggs
- 150g sugar
- 50cl of milk
- 1 pinch of fine salt
- 2 tsp. kirsch

Thursday May 28: Mussels au gratin, parsley, and Cantonese rice with ham
THE RECIPE FOR GRATINE MUSSELS, PERSILLADE
The ingredients for 4 people :
- 12 to 16 molds per person
- 1 sprig of fresh thyme
- 1 glass of white wine
- ½ peeled onion, cut into pieces
- ¼ bunch of parsley, washed and chopped
- 300g of soft butter in ointment
- 75g peeled, degermed and chopped garlic
- 5g of fine salt
- 100g breadcrumbs
- olive oil
Utensils :
- 1 saucepan + 1 lid + 1 spatula + 1 colander
- 1 salad bowl + 1 clean cloth (for past the mold juice)
- 1 grill pan + 1 spoon + 1 roll of film
CANTONIAN HAM RICE RECIPE
The ingredients for 4 people :
- 300g cooked and well drained fragrant Thai rice
- 4 slices of white ham, 0.5 cm thick, cut into cubes
- 100g peas cooked in water
- 1 small onion, peeled and chopped
- 1 clove of garlic, peeled and chopped
- 3 eggs
- 3 tsp. soy sauce
- oil and pepper

Friday 29 May: Pasta alle vongole and strawberries, with rose, whipped cream cheese
THE RECIPE FOR PASTA ALLE VONGOLES
The ingredients for 4 people :
- 240g semolina linguine or spaghetti
- 4 handfuls of clams, soaked well in advance
- ¼ bunch of parsley, washed and chopped
- 2 garlic cloves, peeled and chopped
- ½ glass of white wine

THE RECIPE OF STRAWBERRIES WITH ROSE, CHANTILLY CHEESE
