VIDEO – Les Bons Vivants recipes: salmon and sorrel quiche by Laurent Mariotte


All in the kitchen with the “Recipes of Bons Vivants”! Laurent Mariotte is inspired by a mythical recipe from the Troisgros family, and offers you a salmon and sorrel quiche; a family dish and generous as we like.

Ingredients for a quiche:

— 200g shortcrust pastry (250g flour, 125g butter, salt)

— 500g of fresh salmon fillet

— 1 handful of fresh sorrel

— 2 shallots

– 3 eggs

— 20cl of heavy cream

– Salt and pepper

Brothers Jean and Pierre Troisgros revolutionized French cuisine with their innovative approach, creating “Nouvelle Cuisine” in the 1950s.
