Vegan breakfast for power people – that's how it works

Overnight oats, porridge, poats … that oatmeal can be so varied – who would have thought ?! And there is always something new in our muesli bowl. Today: Zoats. Healthy, filling, tasty and with zucchini. Huhhh? Should that taste good? Yeah, says our author.

The breakfast trends of the last few years have already proven what you can do with bland oatmeal. From overnight oats to warm porridge to protein-containing poats, we now focus on a green breakfast: namely from zoats.

Zoats? What exactly is that supposed to be?

Zoats are made from zucchini and oats, or oatmeal. Sounds strange, but it tastes really good and not as vegetable as you might think. Zucchini have little taste of their own, but they make the breakfast porridge really creamy. The combination with the oatmeal results in a breakfast that will fill you up for a long time, is super healthy, low in fat, but contains important fiber and complex carbohydrates. It is also easy to digest and we don't fall back to bed straight away after breakfast because the meal is so heavy on our stomachs.

That's how it works:

You need:

  • 100 g of oatmeal
  • 200 ml plant-based drink (water or real milk are of course also possible)
  • 100 g zucchini
  • 1 ripe banana for sweetening
  • 2 tbsp almond butter or other nut butter

Preparation:

  1. Mash the ripe banana and grate the zucchini.
  2. Heat the oat flakes together with the plant drink or the milk and simmer over a low heat for about 5 minutes.
  3. Then add the banana and let it cook until the desired consistency is achieved.
  4. Then add the grated zucchini and nut butter and let it warm up briefly. Finished!
  5. Now just arrange the porridge in a bowl and garnish with toppings (banana slices, berries, nuts, cocoa nibs, coconut chips, apple pieces, etc.).

Super tasty and perfect for those who eat healthier and still want to eat something tasty for breakfast. And for all desperate parents among us whose children don't like vegetables. So it is simply well packaged and cheated under the muesli.
