Vegan filling breakfast for power people – Here’s how it works
Overnight oats, porridge, poats… That oat flakes can be so diverse – who would have thought?! And every now and then something new comes into our muesli bowl. Today: Zoats. Healthy, filling, delicious and with zucchini. Huhhh? Is that supposed to taste good? Yes, says our author.
The breakfast trends of the last few years have already proven what you can do with plain oatmeal. From overnight oats to warm porridge to protein-rich poats, we are now relying on green breakfasts: made from zoats.
Zoats? What exactly is that supposed to be?
Zoats consists of zucchini and oats. It sounds strange, but it tastes really good and not as vegetabley as you might think. Zucchini have hardly any taste of their own, but they make the breakfast porridge really creamy. The combination with the oat flakes results in a breakfast that keeps you full for a long time, is super healthy, low in fat, but contains important fiber and complex carbohydrates. It is also easy to digest and we don’t fall straight back into bed after breakfast because the meal is so heavy on our stomachs.
That’s how it works:
You need:
- 100 g oat flakes
- 200 ml plant drink (water or real milk also work, of course)
- 100g zucchini
- 1 ripe banana to sweeten
- 2 tablespoons almond butter or other nut butter
Preparation:
- Mash the ripe banana and grate the zucchini.
- Heat the oat flakes together with the plant drink or milk and simmer over low heat for about 5 minutes.
- Then add the banana and continue to cook until the desired consistency is reached.
- Then add the grated zucchini and the nut butter and let it warm up briefly. Complete!
- Now just arrange the porridge in a bowl and garnish with toppings (banana slices, berries, nuts, cocoa nibs, coconut chips, apple pieces, etc.).
Super tasty and perfect for anyone who wants to eat healthier and still have something delicious for breakfast. And for all the desperate parents among us whose children don’t like vegetables. So it’s simply well packaged and hidden under the muesli.
