Every German federal state has its regional culinary specialties, in Hamburg it is the Franzbrötchen. This is traditionally at least as much a part of every coffee klönschnack (coffee klatsch) as a classic “Moin”. The Butter cinnamon pastries can be found in almost every Nordic bakery, and now even in more diverse versions such as with sprinkles, pumpkin seeds or jam.

However, it is still not entirely clear where this sweet revelation originated. There are a number of myths surrounding the pastry, which say that the Franzbrötchen was supposedly once baked in honor of Napoleon. Others report that the invention originated in a French bakery in Altona.

Be that as it may, this rich delicacy is welcome at any table, but baking it yourself is too time-consuming for most people. No wonder, because the dough takes time to be made and processed. However, you don’t have to go without oven-fresh Franzbrötchen, because they can also be prepared in an alternative way – with only three ingredients.

Ingredients for Franzbrötchen:

As an alternative to the cinnamon-sugar-butter mixture, a speculoos cream also tastes good. With it you only need two ingredients.

Preparation:

1. Roll out the finished croissant dough on a baking tray lined with baking paper.

2. Then spread the soft butter evenly over the dough.

3. In a small bowl, mix the sugar with the two teaspoons of cinnamon and distribute the cinnamon-sugar mixture evenly over the dough.

4. Now roll the dough up from the long side into a large roll. To turn the roll into delicious French rolls, roll the roll into 5 centimeter wide pieces.

5. For the unmistakable Franzbrötchen look, use the handle of a wooden spoon: press it into the dough parallel to the cut surface and place the individual flattened rolls on a baking tray. Leave some space between the resulting French rolls as they will rise a bit.

6. Preheat the oven to 200 °C top and bottom heat (180 °C fan oven).

7. Let the Franzbrötchen rise a little on the baking tray for another 20 minutes before putting them in the oven. Bake them there for 25 minutes on the middle shelf until they shimmer golden brown. If you want, you can also dust the Franzbrötchen with powdered sugar to top it off.
