Chinese New Year: Asian soups in the spotlight: Femme Actuelle Le MAG

Bowl cooking is a tradition in Asia. Meat, pasta, broth, vegetables… Everything is eaten directly in the container. And unlike our veloutés with mild flavors, Asian soups are often loaded with spices. A brief overview of the different soups from Asia, to share all year round or more particularly on Chinese New Year:

Pho soup: pronounced “fire”, this dish is the best known in Vietnam. There, it can be consumed at any time of the day, especially in the morning. There are lots of different pho, with beef, chicken, pork… But traditionally it contains rice noodles, beef broth, star anise, cinnamon, ginger and onion toasted, brown cardamom. At the end of cooking, we add the beef and the last spices such as Thai basil and coriander.

Miso soup: Straight from Japan, miso soup is very simple to prepare, provided you have the right ingredients and in particular miso, a fermented and salty soy bean paste. Then, a dehydrated black mushroom, 4 button mushrooms, 1 carrot and 50 g of tofu will do the trick. Simmer everything in a liter of water for 10 minutes and that’s it.

Ramen: Another traditional dish from Japan, ramen is a very popular paste broth in Asia. Once again the recipe is super easy: you just need to dip noodles (made from wheat flour) into a meat-based broth flavored with soy or miso sauce. There is also Tom Yam: fans of spicy flavors take note, this soup from Thailand is very spicy. Made with shrimp, lemongrass and nuoc-mâm, you can sweeten it with a little coconut milk.

Asian soup: some recipe ideas

Asian shrimp soup : start by preparing the vermicelli according to the instructions. In a large saucepan, heat 1L of chicken stock with 200ml of coconut milk, chopped onion and curry. Cook for 10 minutes and add vermicelli, nuoc nam, soy sauce, chili puree, lemon juice and chopped chives. Mix and cook for 2 minutes. Serve immediately, the soup is ready to be enjoyed.

Asian beef soup : peel carrot and onion. Mix beef broth, onion, ginger, carrot, lemongrass, cinnamon and pepper in a saucepan. Bring to the boil then reduce the heat, cover and simmer gently for an hour. Thinly slice the steak, distribute the noodles then the raw meat, shiitake mushrooms, coriander and bean sprouts in the bowls. Pour in the broth.

Asian coconut milk soup : for a dessert or a gourmet snack, indulge in the coconut milk, pineapple and banana soup. Start by pouring coconut milk into a large saucepan, add 4 tablespoons of sugar and a good pinch of salt and bring to the boil. Add 2 bananas cut into slices. Turn off the heat, cover and let sit for 15 minutes. Cut the pineapple into small cubes and add them to the preparation. Once poured into the bowls, sprinkle with sesame seeds previously browned for a minute in the pan.
