To treat 6 people with this gourmet chocolate mousse, you need:

  • 50 g of brown butter
  • 2 g of sea salt
  • 180 g dark chocolate 64%
  • 50 g of water
  • 450 g whipped cream
  • 60g egg yolk
  • 450g whipped cream
  • 15g milk

1. Whip the cream until you get a soft texture.

2. Keep cool.

3. Put the butter in a saucepan and heat it until a nutty color is obtained.

4. Pour it over the chocolate.

5. Mix and add the salt.

6. At the same time, boil the water and the sugar and pour the rendering onto the yolk previously mixed with the milk.

7. Put everything back in a water bath and bring it all to 83 ° C.

8. Pour into a mixer bowl and whip the sabayon.

9. Mix 1/3 of your whipped cream directly with the chocolate-butter-salt mixture.

10. Incorporate the rest of the cream gently with a whisk.

11. Once the sabayon has been mounted, stir into the previous mixture until you obtain a homogeneous texture.

12. Pour into a dish.

13. Enjoy without moderation.
