A quantity of toxins to control

Aflatoxins are produced in the fields or during storage. They develop more in areas with a subtropical or Mediterranean climate, but can also appear in temperate areas during very hot and dry seasons. It is possible to find it in many foods such as nuts, peanuts, corn, rice or crude vegetable oils, list l‘EFSA. “Aflatoxins are known to be genotoxic and carcinogenic, therefore consumer exposure to these toxins through food should be kept as low as possible”, recalls the European Authority. It is for this reason that the European rules in force allow maximum aflatoxin content in products intended for human consumption.
