  • 1 egg yolk
  • a bit of milk

For the béchamel:

  • 200 g of milk
  • 15 g of flour
  • 15 g of butter
  • 75 g of diced ham
  • 40 g grated Comté cheese
  • salt and pepper

The steps of the recipe:

  1. Start by making the ham and cheese béchamel. Melt the butter in a saucepan over low heat, once it foams, add the flour and whisk until you have a paste. Let this paste cook for 30 seconds, stirring constantly. Then pour in the milk in 3 batches while stirring. Once boiling, let the béchamel cook for 1 minute. Season with a little salt and pepper then add the diced ham and grated Comté cheese. Leave the béchamel to cool off the heat.
  2. Meanwhile, cut out 10 rectangles of puff pastry.
  3. Using a rolling pin, roll out 5 rectangles of pasta so that they are a little larger than the other 5 rectangles.
  4. Garnish the small rectangles with cold béchamel pasta. Then cover with the large rectangles. Seal the edges together using a fork and pressing lightly.
  5. Place the treats in the freezer for at least 30 minutes. Cook’s tip: the cold will allow the béchamel to set to prevent it from leaking during cooking.
  6. Preheat the oven to 180°C.
  7. After 30 minutes, take out the treats and brush them with egg yolk diluted in a little milk.
