Who doesn’t know it: The fridge is almost empty, except for a few leftover vegetables that prevent you from filling it up to the brim again. Throwing away is not an option, but lacking the imagination for a new culinary creation? It’s a good thing that this ultimate leftover recipe has found its way to you, because you can’t conjure up anything better from leftover vegetables. In addition, the dish succeeds in record time – perfect for days when it has to be particularly quick (actually always).

You need these ingredients for rice paper dumplings:

  • All sorts of vegetables (carrots, leeks, zucchini, mushrooms, broccoli go particularly well here)
  • 2 tbsp soy sauce
  • Rice paper for frying
  • 1 tbsp olive oil
  • 1 tbsp vegetable broth
  • 200ml of water

Optional for the sauce:

  • 2 teaspoons peanut butter
  • 1 tsp Sambal Oelek
  • 2 tbsp soy sauce
  • 1 tsp Sriracha

For refinement: some finely chopped coriander and a few peanuts

Preparation:

  1. Toss together leftover vegetables and chop into small pieces.
  2. Then put olive oil in a pan and sauté the vegetables.
  3. Mix the vegetable broth with the water and add to the vegetables with the soy sauce, then let it simmer a little.
  4. Soak rice paper in lukewarm water.
  5. Wrap a dollop of the vegetable mixture in rice paper. It is best to double the rice paper so that nothing falls apart.
  6. Fry the whole thing in the pan until the rice paper dumplings are nice and crispy on all sides.

For the dip: Mix all the ingredients together until you get a creamy mass. It doesn’t matter if you don’t have all the ingredients at home. It is also sufficient if you only mix the peanut butter with the soy sauce. Serve with fresh coriander and chopped peanuts. Bon appetit!
