To start, cut 3 nice lemons using a sharp knife. Then, with a spoon, remove the insides of the lemons. Keep the skin aside, as it will serve as a cup. Squeeze the flesh of the lemons that you have collected. In a saucepan, pour 25 cl of whipping cream. Then add 20 g of sugar, a little vanilla flavoring and some lemon zest. Mix well, pour in the lemon juice and mix again. Let reduce for 10 minutes over low heat. Pour the mixture directly into the empty lemon skins then put them in the refrigerator for 2 to 3 hours. It’s ready, all you have to do is enjoy.

Lemon curd, the other lemon cream

While lemon cream is obviously delicious on its own, you can also serve it with biscuits to add even more deliciousness to your dessert. In addition to this lemon cream, there is lemon curd, another classic lemon dessert. A deliciously tangy British specialty, it’s not very difficult to make at home, but you will need very different ingredients, including butter. You should not panic over the quantity to incorporate into the recipe, it will allow your lemon curd to obtain a nice smoothness. To make it successfully, grate the zest of 2 lemons, then squeeze the juice of 4 lemons. In a saucepan, mix the juice and zest of the lemons, 4 eggs and 250 g of sugar. Heat in a bain-marie, stirring constantly, for 20 minutes, until the mixture thickens. Add 100 g of butter in pieces and mix. Then pour into jars and store in a cool place. With this preparation, you can make delicious pies, cakes, pavlovas, cheesecakes or pancakes.
