One of my favorite summer salads is this one: super colorful with orzo, tender vegetables and lots of good things“, comments Claire in her video.

The list of ingredients for 4 people:

  • 400g orzo
  • 1 eggplant
  • 1 zucchini
  • 1 yellow bell pepper
  • 1/4 red onion
  • 50g feta
  • A dozen black olives
  • A dozen cherry tomatoes
  • 2 chicken breasts
  • 1/2 lemon
  • 1 tbsp. tbsp paprika (optional)

The recipe steps:

  1. Preheat your oven to 200°C.
  2. Dice the eggplant, zucchini and pepper, then place them on a baking sheet and drizzle with olive oil, thyme, garlic powder, salt and pepper. Mix, then bake for 30 minutes.
  3. Cook the orzo. While it cooks, cut your chicken breasts into pieces. Brown them in a pan with a drizzle of oil, salt and paprika.
  4. Cut the cherry tomatoes, black olives, red onion and crumble the feta.
  5. Pour all the ingredients into a salad bowl with a drizzle of olive oil, the juice of 1/2 lemon, and salt. Mix well.
  6. To be enjoyed warm or cold. Enjoy your food

Orzo: what is it?

Don’t be fooled by its appearance, which looks just like rice. Orzo is actually a variety of dry pasta, mainly eaten in the Mediterranean basin. And this little starch, super easy to cook, has many names: risoni (“big rice”) or orzo (“barley”) in Italy, Greek pasta in the Netherlands and Belgium, but also bird’s tongue or oats In France.

To cook it, nothing could be simpler. In risotto, or in a salad, orzo goes wonderfully with tomatoes, eggplant, olives or even peppers. As for cheeses, favor those with a semi-firm paste, such as feta or halloumi. As a meat accompaniment, head for chicken or white fish. For soup, orzo can replace the traditional alphabet or vermicelli pasta that usually accompanies soups. All you have to do is incorporate them cooked into your ready-made bowl of soup.
