What is a roux?

In the kitchen, the term “roux” is a basic preparation which consists of mixing a fat with flour in equal quantities. Diluted with milk, you get a béchamel. This technique is used to thicken sauces and soups. There are different colors of roux depending on the cooking undergone: white, blond and brown roux.

How to make homemade pizza dough?

It’s very simple to make and you will have fewer disappointments preparing it at home than buying it in the supermarket. On the shelves, few are those that do not contain palm oil and preservatives… Another argument of home-made, pizza dough is best prepared a few days in advance. It develops more flavor and it freezes very well. Make several dough pieces and you will always have arguments to eat pizza.

Homemade pizza dough recipe

  • 280g plain flour
  • 5 g of baker’s yeast
  • 1 spoon. powdered sugar
  • 2 tablespoons olive oil
  • 15 cl of lukewarm water
  • 1 teaspoon of salt
  1. In a large salad bowl, pour 5 cl of water, then dissolve the yeast in it.
  2. Then add the flour, sugar, salt and the rest of the lukewarm water, then stir everything together.
  3. Add the olive oil. Knead the dough so that it becomes flexible and no longer sticks to your fingers and the sides of the bowl.
  4. Shape it into a ball, then cover it with a damp cloth.
  5. Leave to rest in a warm place for 1 hour, until the dough doubles in size.
  6. Cut the ball in half and roll out to make a rounded dough. Place your ingredients on top and bake for ten minutes at 200°C

The recipe for Croque-Monsieur style pizza bread from Instagrammer Jordan M, alias Week :

Ingredients :

  • 1 rectangular pizza dough
  • 2 slices of ham cut in half
  • 4 slices of Edam type cheese
  • 20 g butter
  • 50g flour
  • 50 cl of milk
  • nutmeg
  • salt pepper

Recipe :

  1. Prepare the béchamel. In a pan, heat the butter and add the flour. Mix well to form a roux.
  2. Pour the milk into the saucepan, stirring constantly.
  3. As soon as the preparation becomes a little creamy, add nutmeg, pepper and salt.
  4. Pour milk if necessary. The béchamel should be smooth and not pasty. Remove from heat.
  5. Unroll the pizza dough and using a knife, cut the dough into 4 equal parts.
  6. In the center of the dough, pour a little béchamel
  7. Add the ham and cheese. Add a teaspoon of béchamel on top.
  8. Fold the edges of the dough towards the center
  9. In a hot non-stick skillet, heat a skillet and add the croque-monsieur pizzas for 5 minutes on each side.
  10. Then on a rack place the croque-monsieur pizzas for 5 minutes at 200°C.
  11. Taste without delay.
