Most Germans take far too little, at the same time the perfect noodle needs plenty of salt. The salt increases the boiling point of the water and thus shortens the cooking time. It also balances the salt content between the pasta and the cooking water. This has the positive effect that this balance does not happen during cooking and thus the taste of the pasta is removed.

But Oil has lost nothing in the pasta water! It wets the surface of the spaghetti so that it can no longer absorb the sauce. So that the spaghetti does not stick together, it is better to stir from time to time.

When spilling, the spaghetti should still have a bite, because they cook a little more. But especially you shouldn't put them off. This flushes the starch off the spaghetti and the sauce no longer adheres properly. It also makes the spaghetti cold faster.

Better a little Cooking water in the bowl to prevent the spaghetti from sticking. The spaghetti are also in Italy often already mixed with the sauce before serving.
