Nothing tastes like summer better in winter than the fruity-sweet Aperol cake.

We miss ending the mild summer evenings with a refreshing spritz. That’s why we give winter a little pinch of summer, with a fruity-sweet Aperol spritz cake! Cake? Yes, you heard that right! The delicious eggnog Gugelhupf, for example, proves that alcohol works in cakes – so it also works with Aperol. With its fruity-sweet notes and the slightly bitter taste of Aperol, your cake will become something very special. So, what are you waiting for? Grab your baking utensils and then let’s have some baking fun!

Ingredients:

  • 200 g butter (soft)
  • 240 g sugar (white)
  • 2 eggs
  • 2 egg whites
  • 120 g ground almonds
  • ½ packet baking powder
  • 4 tbsp orange juice
  • 3 tbsp organic orange zest
  • 3 tbsp aperole
  • 1 tbsp organic lemon zest

Ingredients for the glaze:

  • 150g powdered sugar
  • 3 tbsp aperole
  • Add some orange or lemon juice if needed

Preparation:

  1. Grease the baking pan.
  2. Preheat the oven to 180 degrees circulating air.
  3. Beat the butter until fluffy. Then gradually add the sugar.
  4. Now add an egg and the yolk of an egg and stir until creamy.
  5. Grate the organic orange and the organic lemon and squeeze out the juice.
  6. Then mix in together with the Aperol.
  7. Now slowly mix in the flour and ground almonds and stir to form a smooth dough.
  8. Beat three egg whites in a separate bowl and carefully fold into the rest of the batter.
  9. Then put in the baking pan and bake in the oven for about 50 minutes.
  10. Then let it cool down a bit and in the meantime mix the icing sugar, Aperol and optionally some orange or lemon juice into a glaze.
  11. Spread generously over the cooled cake and let it set again.

Anyone who has gotten baking fever now should definitely try the sophisticated bubble waffles – the upgrade to the conventional butter waffle.
