Even as a child on his parents’ farm in Brittany, Jean-Jacques Jacob was driven and was looking for a meaningful way of life. Studies in philosophy and education, an apprenticeship as a carpenter, and a life in France and Germany followed. Eventually he arrived in Georgia driving a VW bus and ate bread from a farmer, which he tolerated despite his gluten allergy.

Jean-Jacques began researching wheat and baking and fell in love with the country and people along the way. Today he grows the “red Caucasus” in a small village, an archetype of wheat that used to be native here, in one of the oldest European cultural landscapes, and is again today.

In the capital Tbilisi, Jean-Jacques runs a small bakery where he combines his wheat, the spring water of the Caucasus and – if he can get it – the salt of Brittany into wonderful loaves of bread. For Jean-Jacques, baking bread is a service to the community, and growing wheat is a living economy and ecology. And so agriculture and bread-baking have become greater teachers for him than his philosophy books ever could have been.
