  1. Line the bottom of the springform pan (26 cm diameter) with baking paper. Preheat the oven to 180 degrees top/bottom heat.

  2. For the sponge cake dough

  3. Separate eggs. Beat egg whites with salt until stiff. Sprinkle in half the sugar and continue beating until the sugar has dissolved.

  4. Beat the egg yolks with water until foamy, sprinkle in the remaining sugar and continue beating. Fold the egg yolk mixture into the egg whites.

  5. Mix the flour, starch and baking powder, sieve into the egg mixture and carefully fold in with a whisk.

  6. Pour the dough into the springform pan and smooth it out. Bake in the preheated oven for 25-30 minutes. Let cool down.

  7. For the patisserie cream (crema pasticcera)

  8. Bring the milk to the boil with 2 tablespoons of sugar, vanilla sugar and lemon zest. Remove from heat. Beat the egg yolks and remaining sugar in a bowl (round stainless steel mixing bowl) with the whisk of a hand mixer until foamy. Sift the cornstarch over it and stir in briefly.

  9. Place the whipping kettle over a hot water bath. Gradually pour in the hot milk, stirring constantly. Continue beating until the cream sets and takes on a thick consistency (this process is called “pull off to a rose”). Let the cream cool down.

  10. Assemble the cake

  11. Cut the sponge cake twice horizontally. Cut about 4 centimeters from the middle slice and about 8 cm from the lid all around. Remove the brown crust from the cut edges, cut the rest into fine cubes and set aside.

  12. Beat the cream until stiff and fold into the cream.

  13. Place the bottom layer on a cake plate, drizzle with almost half of the limoncello and spread the cream on top to a thickness of about 1 cm. Place the middle third in the middle of the cream, also drizzle with limoncello and spread with cream. Finally, place the small lid on top and drizzle with the rest of the limoncello. Cover the cake all over with the remaining cream, then distribute the cake cubes all around and press down lightly. Chill the cake until serving. Serve dusted with powdered sugar.

Tip

  • So that the sponge cake is strong yellow COLOUR You can use real saffron or a few drops of yellow food coloring.
  • Sifted flour is easier to fold into the egg mixture so that the sponge cake becomes really airy.

Variation ideas for the Torta Mimosa

  • If you like, sprinkle the cake additionally yellow sugar mimosas. The flower decoration is available in online shops.
  • It’s easier, if you don’t arrange the cake as a dome. Cut the middle base into fine cubes and layer the other two bases on top of each other.
  • Preparing the Crema Pasticcera requires some practice, so that the egg yolks do not curdle. If that seems too difficult for you, you can simply cook vanilla pudding and fold in whipped cream
