Ingredients :

  • 125 g butter (+ 50 g butter for the mold)
  • 1 sachet of vanilla sugar
  • 5 eggs
  • 150g caster sugar
  • 115 g flour (+ 20 g flour for the mold)
  • 6 kiwis
  • 50 cl of soy milk
  • 150 g icing sugar
  • 1 tablespoon of water
  • 1 teaspoon salt

The preparation stages:

Step 1 : preheat the oven to 150 ° C.

2nd step : melt the butter for 50 seconds in the microwave. Book it.

Step 3: Separate the egg whites from the yolks.

Step 4: in a salad bowl, beat the yolks with the powdered sugar, with a mixer, until the mixture whitens.

Step 5: then add: the melted butter, vanilla sugar, flour, water and milk.

Step 6: whisk the egg whites, firm, with a pinch of salt.

Step 7: add the whites in 3 batches, using a whisk.

Step 8: pour half of the preparation in a buttered, buttered and floured mold.

Step 9: put the kiwis (after peeling and cutting into rings) and cover them with the rest of the preparation.

Step 10: bake the cake for 1 hour.

Step 11: let it cool, then reserve it for at least 2 hours, in the refrigerator, before removing it from the mold and serving it.

The recipe for salted kiwi cheesecake

Ingredients :

  • 4 kiwis
  • 10 sprigs of chives
  • 1 tablespoon heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon of honey
  • 150 g fresh cheese
  • 100 g aperitif cookies
  • 100 g nuts
  • 75 g butter

The preparation stages:

Step 1 : in a saucepan, melt the butter over low heat. Mix the coarsely broken appetizer cookies with the nuts to obtain a powder with a light grain. Add the butter and mix again slightly until a homogeneous mixture is obtained.

2nd step : on a sheet of parchment paper, make 4 discs about 1 cm thick using cookie cutters. Tamp well and place the preparation in the fridge for at least 1 hour.

Step 3: in a small bowl, delicately mix with a fork the fromage frais, the crème fraîche, the pepper and the chopped chives.

Step 4: peel the kiwis, cut them into thin slices and let them marinate in olive oil and honey.

Step 5: on each cheesecake base, place the cookie cutter, place about 1 cm of cream cheese mixture and add 2 slices of kiwi.

Step 6: redo a layer of cream cheese and finish with 2 new slices. Repeat for the other 3 cheesecakes. Place in the refrigerator 1 hour before tasting.

You can add smoked salmon between the cream cheese preparation and the kiwi slices or by placing it at the last moment on the cheesecakes.
