Winter vegetables: three simple recipes for a healthy January

January is also accompanied by good intentions. Many now rely on a balanced and healthy diet. However, anyone who thinks that vegetables are in short supply in winter is wrong. At the beginning of the year, varieties such as leeks, potatoes, carrots, onions and spinach can be found in the vegetable department. These are three quick and tasty recipes with seasonal vegetables.

Leek soup with mushrooms and mince

Ingredients for two people: 100 g mushrooms, two sticks of leek, 100 g minced meat (mixed), 50 g cream cheese, 300 ml vegetable broth, pepper, salt

Preparation: Clean the mushrooms and leek and cut into slices. Fry the minced meat in a saucepan, add the mushrooms and leek and also briefly fry. Deglaze everything with broth. Then simmer until the leek vegetables are cooked. Now stir in the cream cheese and let everything boil again.

Spinach salad with a fruity vinaigrette

Ingredients for two: 100 g spinach (fresh), 1 tsp salad herbs (fresh, frozen or dried), 20 g onions, 20 ml olive oil, 30 ml balsamic vinegar, half an orange (pressed), half a teaspoon mustard, 1 teaspoon maple syrup or honey

Preparation: Wash the lamb's lettuce well, remove coarser stems and withered leaves, dry in a salad spinner. Chop the onion very finely and mix thoroughly with vinegar and oil, as well as with orange juice, mustard, honey or maple syrup and herbs – a shaker is good for this. Pour the marinade over the salad before serving.

Winter vegetables of all kinds

Ingredients for two: 200 g carrots, 150 g turnips, 150 g Brussels sprouts, 50 g leeks, 1 onion, 250 g potatoes (boiling), 30 ml cream, 175 ml vegetable broth, pepper and salt

Preparation: Peel carrots, turnips, potatoes and onions. Remove the outer leaves and the end of the stem from the Brussels sprouts and the ends of the leek. Wash everything. Now cut the onion into coarser pieces, leek, carrots, turnips into cubes about 1 centimeter in size. Heat some oil in a deep pan or in a saucepan, fry the vegetables in it for about two minutes, stirring frequently. Then pour in the vegetable broth, cover everything and cook in the steam. Now stir in the cream and season the vegetables with pepper and salt.
