Craving rolls but no yeast on hand?

Even if the situation seems to be easing somewhat: When it comes to yeast, there are still very large regional differences in Germany – and unfortunately the majority still look at the gap on the shelf when shopping where yeast should otherwise be. But bread fans don’t have to despair: This recipe doesn’t need yeast. It works with just three ingredients, is ready in a flash – and is also a real low-carb treat.

Ingredients: All good things come in threes

All you need for these delicious rolls is actually:

  1. 1 cup Greek yogurt
  2. 200g flour
  3. 2 teaspoons of baking soda

Preparation: This is how the lightning rolls are made

  1. You preheat your oven to 200°.
  2. You take the yogurt cup and tip it completely into a bowl. But don’t throw the cup away – you’ll still need it now!
  3. Now fill the empty yogurt cup with flour again – right up to the edge so that it is completely full.
  4. Now add the 2 teaspoons of baking powder to the flour. If you want, you can also add a pinch of salt – it tastes good, but it’s not absolutely necessary (and given the promise of “only three ingredients” it’s also cheating).
  5. Now mix the flour and baking powder with a spoon. If you’re clever, you can do this directly in the yoghurt pot, otherwise it’s easier (and cleaner) in a separate bowl.
  6. Now add the flour and baking powder mixture to the yoghurt and knead everything into a firm dough. This works with a dough hook mixer, but also with a spoon or simply by hand. If the dough is still very wet and sticky, you can add a little more flour until a good consistency is achieved.
  7. Now you work the dough into three to four small rolls – this is best done with a lot of flour on the surface and on your hands. Now place the rolls on a baking tray.
  8. Now bake the rolls for around 20 minutes until they are golden brown and crispy.
  9. It’s best to eat them straight away when they come fresh out of the oven – that’s how the rolls taste best. Bon appetit!
