Friday May 3 in Here it all begins…

Teyssier leaves the Institute

Elected director of the Institute, Cardone moved into Teyssier’s former chair. Claire then reminds him of his part of the bargain. Cardone immediately reassures her by claiming to have contacted Louis’ lawyer to tell her of his desire to hire him at the Institute. The procedure to get him out of prison has been launched. At the same time, Teyssier arrives in the office. Cardone gives him back the family photo that was lying on his desk as well as his new employment contract as a pastry teacher.

Back home, Teyssier talks about it with Constance. The latter, who has just taken his blood pressure to monitor his condition following the sclerosis attack he suffered the day before, insists that he take his foot off the gas. But Teyssier is really hesitant to accept the professorship that Cardone offers him. Outraged, Constance declares that she will not stay with him if he decides to stay at the Institute.

At Double A, Claire tries to reconnect with Olivia. The latter is angry with him for having Cardone elected head of the Institute even though she is a sadist. She reminds him that she traumatized Bérénice and that she even put her own son off cooking. Claire retorts that she had no other solution to get Louis out of prison, reproaching her partner for not having supported her on this subject at the time. Olivia explains that she voted against Louis’ return to the Institute to protect him: she sincerely wanted to spare him from facing the gaze of the students who know that he killed his father and from returning to a place full of trauma. But Claire feels that Olivia can’t understand the worry she has about her son because she doesn’t have children. Deeply hurt by these words, Olivia decides to break up.

Meanwhile, the Master’s students try to convince Teyssier to stay at the Institute. Only Anaïs declares that the former director must above all do what he really wants.

A little later, Teyssier gathered all the students at the amphitheater to announce his decision to them: after careful consideration, he declined Cardone’s offer and left the Institute – not without emotion. He knows that he is leaving the students in good hands thanks to Antoine and the rest of the teaching staff. Finally, he promises the students to come back to see them after their studies as soon as they have their establishment. Everyone applauds him.

Teyssier then goes into the management office one last time to pack his things. Constance joins him, trying to find out if he won’t change his mind at the last moment. But her husband declares that he wants to put their relationship before his career. He agrees to go with her to the Landes. Constance is overjoyed.

In the park, Leroy repeats Teyssier’s very moving speech to the Armand sisters, unlike that of Cardone the day before. Clotilde also has some regrets about having placed him at the head of the Institute. Rose recalls that they had no choice: it was that or going out of business. Clotilde also reassures herself by telling herself that Cardone has agreed not to make any decisions without talking to them. Leroy, however, highlights the latter’s shenanigans to succeed in getting elected director. Faced with Clotilde’s questions, he reveals that Cardone made a deal with Claire so that Louis would be rehired at the Institute.

After which, Leroy will say goodbye to his best friend before he leaves. He wishes him to enjoy his new, more relaxing life with his wife. Many students then come to pay homage to the former director. Teyssier takes Anaïs in his arms, making her promise to never give up and to always fight for her cuisine.

Cardone judges Kelly’s skills

At the studio, Landiras comes to taste the pastry that Kelly developed with his team. He notes that they are on the right track, but that there is still work to be done. Kelly agrees with him. Nevertheless, she confides, in the same way as Salomé and Malik, to dreading Cardone’s very demanding view of their work. Landiras promises them to find a solution to prevent the new director from sticking her nose too deep.

Later, Cardone meets Landiras and asks him about the Coupe de France de Cuisine. The professor then praises the merits of Kelly’s brigade, ensuring that there is no need to worry about their ability to win the competition. Despite her arguments, Cardone wants to verify it for herself.

So she goes to the studio during the day to taste Kelly’s dessert: a Panettone millefeuille with orange marmalade, accompanied by a white wine sauce. Landiras notes the clear improvement of this version compared to the one he tasted in the morning. Cardone, meanwhile, asks Kelly directly if she is satisfied with her work. She answers yes. Once Cardone leaves, the brigade wonders what she really thought of the dessert. They assume she loved him.

But, at the end of the day, Cardone summons Kelly and Salomé to her office to tell them her real opinion: even if Kelly seems determined and promising, she nevertheless judges that she will be no match for experienced chefs. Cardone therefore wants Salomé to take her place as leader, allowing Kelly to stay in the brigade. But Salomé categorically refuses, praising the merits and legitimacy of her little cousin. In this case, Cardone decides to fire them both in order to create a whole new brigade.

Thelma is going to do an internship at the Institute

Thelma finds Solal in the kitchen. The latter is making lobster ravioli. She offers to help him so he can finish faster and they can go and enjoy the spa at his hotel. Solal lets her make ravioli using a cookie cutter, surprised to see that she does quite well. Even David, who joins them, confirms that she has good technique.

Later, Solal and his father accompany Thelma to the Institute parking lot. It’s time for her to go home. However, she decided to return to the Institute to do a one-week observation internship and she appointed Solal to be her tutor! The young man wonders about Thelma’s sudden passion for cooking. She admits that she really liked their session together: not being used to being told that she is doing something well, it made her want to continue.
