Muffins with potatoes and cheese: the easy recipe

For a change from sautéed or steamed potatoes on the side, it’s high time to try the incredibly delicious potato and cheese muffins. Warm, they can accompany a piece of meat or a fish, as well as complement a spinach omelet or a salad of tomatoes or lentils. They can also be eaten cold cut into small cubes as an aperitif or to nibble at the office during a quick lunch break. The recipe is very easy to prepare and will require less than 25 minutes (including cooking) to prepare.

Potato and cheese muffins: the ingredients

For 8 muffins

  • 500g of potatoes
  • 80g butter
  • 2 eggs
  • 70 g grated cheese
  • 50 g of cheese in one piece
  • Nutmeg, salt and pepper for seasoning

The different stages of the recipe:

1. You must first cook the potatoes in water (or steam) until you can push a fork through the heart without resistance. It’s up to you to choose the variety you prefer (firm or floury flesh, it doesn’t matter).

2. Then mash the baked potatoes with a fork and mix them with the butter, egg yolks and spices.

3. Place the potato mixture in the muffin tins about halfway up and press down a little in the middle to place a piece of cheese. What variety? Here again, you can let your desires speak for themselves. Young gouda or mozzarella, for example, go well with potatoes. But it might as well be a piece of county!

4. Spread another layer of the potato mixture over the cheese core to the top of your molds and cover the preparation with the grated cheese.

5. Now, it’s time to put the potato and cheese muffins in the oven. Let them cook for about 15 minutes cooking at 220 ° C . Enjoy when you want: hot, warm or cold. You can even reheat them if you wish. Enjoy your meal !
