- 800 grams of Hokkaido
- 600 g carrots (peeled)
- 1 onion
- 5 cm ginger
- 2 tbsp butter
- 1 l vegetable stock
- 500 ml coconut milk (from the can)
- Juice of one lemon
- salt
- pepper
- Sunflower seeds (to taste)
- Coriander (to taste)
Preparation of the pumpkin soup:
- Peel and dice the vegetables, ginger and onion and sauté in butter.
- Pour in the broth and simmer for about 20 minutes until everything is nice and soft.
- Finely puree the pulp, stir in coconut milk and season with spices and lemon juice.
- Heat the pumpkin soup again and garnish with the coriander and sunflower seeds.
