Time is short and you have to hurry up in the kitchen again? Then this Mediterranean gnocchi salad with fresh vegetables is just what you need.

As a casserole, with a delicious sauce or in the pan: gnocchi are usually considered a warm dish, but the potato dish can also be served cold, preferably as a Mediterranean gnocchi salad. Best of all: The sophisticated salad can be made in just a few simple steps and is ideal for any occasion.

Ingredients:

  • 1 pack pan-fried gnocchi (approx. 400 g)
  • 1 onion (red)
  • ½ clove of garlic
  • 1 pepper (red)
  • 200 grams of mushrooms
  • ½ zucchini
  • ½ pack of arugula
  • A handful of pine nuts
  • 4 – 5 tbsp high quality olive oil
  • 2-3 tbsp green pesto
  • 1 dash of herbal vinegar
  • To refine: herb salt, pepper
  • Optionally some mozzarella

Preparation:

  1. Preheat the oven to 200 degrees.
  2. Put olive oil in a pan and fry the gnocchi until golden brown.
  3. Wash arugula.
  4. Cut the onion into fine rings.
  5. Peel and chop the garlic.
  6. Cut peppers into strips.
  7. Wash and quarter the mushrooms.
  8. Wash and slice zucchini.
  9. Mix the onions, garlic and vegetables together with 2 – 3 tablespoons olive oil and Mediterranean herbs and bake in the preheated oven for 25 minutes.
  10. Meanwhile, put the pine nuts in a pan and toast on low until golden brown. They burn very easily, so be careful and toss the pine nuts in the pan regularly.
  11. Then remove the vegetables from the oven and mix with the fried and cooled pan gnocchi.
  12. Once everything has cooled slightly, fold in the remaining olive oil, herbal vinegar, salt, pepper, pesto and rocket and mix well. Top with pine nuts and possibly some mozzarella and enjoy.

If you want, you can of course experiment with different types of vegetables and optionally other toppings. Alternatively, for example, a combination of carrots, aubergines, mushrooms and feta cheese tastes good.
