It’s mushroom season again! The sponges are one of the culinary highlights, especially in autumn. No wonder, because they are not only tasty, but also very healthy. Mushrooms are high in vitamins, proteins, and fiber. In addition, they are low in calories and fat. They can also help with diets, because the stomach is busy with the meal for a long time, which is why you are full longer. However, during cooking, the mushrooms can lose important nutrients that contribute to a healthy diet. The strong aroma can also be lost if the mushrooms are cooked incorrectly.
Purchasing error
The purchase itself is crucial for the taste and nutrients. Many make the mistake of buying canned mushrooms. These don’t even begin to contain as many nutrients as fresh mushrooms. There is also a difference in taste. Mushrooms are often treated with pesticides. Therefore, it is worth buying them organic.
Store mushrooms properly
Correct storage is important for enjoying mushrooms! If the sponges are not boiled immediately after shopping, they should be placed directly in the refrigerator.
Often times, mushrooms are sold in plastic packaging. This is not how they should be stored. This means that the mushrooms can easily spoil. You like it airy. Storage in household paper is therefore effective and simple. The mushrooms can be kept in the refrigerator for about three days.
Water is taboo when cleaning
Many people wash mushrooms under running water. This is probably the most common mistake that happens when preparing mushrooms. As a result, they lose their typical aroma and important vitamins.
It is better to only clean the mushrooms with kitchen paper. To do this, hold the mushroom by the style – this is a very easy way of removing dirt from the head to the style. If the dirt cannot be removed, you can help with a few drops of water. Then the mushrooms can be quartered or sliced.
Stay away from fats
Often the question arises whether the mushrooms should be fried with butter or oil. Surprisingly, the answer is: neither nor! The fat in the pan gives it a rubbery consistency. For a perfect, crispy result, the mushrooms should be added to the pan pure. If you stir regularly, they won’t burn. Another advantage is that the mushrooms are lower in calories.
On the other hand, if you want to add onions, some fat should be used. Oil or butter must be used to sear onions. Olive oil is particularly suitable here.
Cooking on high or low?
Often the sponges are cooked in a small pan so that they pile up. That’s another mistake! It is better to use a large pan where the mushrooms are fried evenly.
It is also best to cook on a low level. So you can enjoy an aromatic taste experience and at the same time the mushrooms do not lose any important nutrients. If the health aspect is less important to you, you can also fry the mushrooms on a high level, which gives them a nutty and strong aroma. However, they lose important nutrients as a result of the hot frying.
If you fry mushrooms for too long, they become soft and bland. The ideal cooking time depends on the size. Basically, however, the mushrooms are ready to be served after five to ten minutes.
