Even if Christmas is not over yet, it is never too early to start thinking about the galette des rois. The latter is eaten during the Epiphany, on January 6. This year 2022, it falls on a Thursday. However, a reform of the Christian calendar moved this date to the second Sunday in January, so that everyone can be at home with their family to share a galette des rois. But nothing prevents you from falling for this cake as early as this month or after the traditional date. When we talk about gluttony, there is no rule! Why do we eat a galette des rois at this time of year? It is a religious holiday that marks the arrival of the three wise men in Bethlehem, the city where Jesus was born.

Ingredients for 4 persons

2 puff pastry rolls
1 egg
1 egg yolk
1 tsp. tablespoon of water

For the almond filling:

100 g ground almonds
12g cornstarch or cream powder
80 g icing sugar
20 g almond milk
80 g of butter at room temperature
60 g egg
1 tablespoon of water

Syrup:

100 g of water
100 g sugar

Steps of Cyril Lignac’s galette des rois recipe:

  • Preheat the oven to 200 ° C.
  • Combine the icing sugar, ground almonds and cornstarch in a bowl.
  • Mix the butter with a mixer and add the eggs one by one.
  • Add the almond milk and reserve the preparation.
  • Mix the egg, egg yolk and water in another bowl and place it in the fridge.
  • Pour the sugar and water into a saucepan until it boils and reserve the syrup.
  • Make two circles of puff pastry, each 18 to 22 cm in diameter.
  • Place a sheet of baking paper on a baking sheet, and a circle of dough on it.
  • Spread the almond cream and insert the bean of your choice. Place the second disc of dough and weld the edges together.
  • Make small notches on the sides of the patty with a knife.
  • With a brush, spread the egg mixture on the dough and make rays on the cake to make it prettier.
  • Bake for 40 minutes.
  • Then, spread a little syrup on it so that it is very shiny, and let cool!
