The ingredients for 4 people :

3 to 4 duck breasts at room temperature

15g butter

Fine salt

Marinade of duck breasts:

• 25 g of oyster sauce

• 30 g of soy sauce

• 125 g of pear puree

• 100 g of pineapple puree

• 3 tablespoons of honey

• 4 tablespoons of red pepper paste

Polenta :

• 125 g of precooked corn flour polenta

• 20 g of butter

• ½ liter of chicken broth

• 1 tablespoon of mascarpone

As for utensils, you will need: a cutting board, a chef's slicing knife, a dish, a salad bowl, two whisks, a frying pan or wok and a spatula.
