The pastry chef indicates that the ideal temperature at which chocolate should be stored should be between 20 and 24° so that its flavors and texture remain the same. The best way to preserve your chocolate is simply to protect it from humidity. If you absolutely want to place it in your refrigerator, know that the appearance of these small white spots does not represent any health risk.
