The ingredients for 4 people :

For the koftas:

  • 400 g of minced meat
  • 1 red onion
  • 1 tbsp. teaspoon of cumin
  • 1 tbsp. teaspoon paprika
  • 2 cloves garlic
  • 1/2 bunch of coriander

Tomato sauce :

  • 1 can of crushed peeled tomatoes
  • 2 cloves garlic
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1 teaspoon of ginger
  • Olive oil
  • 1/2 bunch of coriander + 1/2 flat-leaf parsley
  • 4 eggs
  • Fine gray salt, coarse gray salt, freshly ground pepper

The steps of the recipe:

  1. Peel and chop the red onion. Pour it into a salad bowl with the spices and grated garlic as well as the crushed coriander. Add the minced meat, mix everything and form 12 balls.
  2. In a tagine dish over medium heat, pour the olive oil and brown the meatballs. Reserve on a plate.
  3. Pour the spices and grated garlic into the hot oil and mix. Then add the crushed tomatoes, salt, pepper and finally add 3/4 of the two crushed herbs. Cover and cook for 20 minutes over low heat.
  4. Add the meatballs to the sauce and continue cooking for 10 minutes, covered. Finally break the 4 eggs into the tagine dish and cook for 4 minutes uncovered. Then cover for 1 minute to finish cooking the eggs. Sprinkle with the remaining crushed herbs before serving.
