Lucile Leclair’s recipe

Ingredients for 4 to 8 people (depending on appetite)

  • 5 whole organic eggs,
  • 65g semi-salted butter (at room temperature),
  • ½ mustard glass (about 70 g) of brown sugar,
  • 1 slab (200 g) of 70% pastry chocolate.

The preparation

Preheat the oven to 180°C.

Crack the eggs into a mixing bowl and whisk them vigorously, adding the sugar until the mixture is white.

Cut the chocolate into small pieces and melt it in a bain-marie. When it is melted and very hot, add the butter, stirring to melt it also and toss to obtain a homogeneous texture.

Add the butter-chocolate mixture to the egg-sugar mixture, stirring everything quickly.

Pour the mixture into a cake mold (without anything at the bottom), not too wide, so as to reach a thickness of 4 to 5 centimeters. Bake for 12 minutes, not a minute longer. Enjoy warm or cold, unmoulding with a spoon.
